Kola kenda is a savory Sri Lankan herbal porridge traditionally enjoyed in the morning. Recipes change from home to home, but the comforting foundation remains familiar: soft rice, coconut milk, garlic, and green herbs.
This single-serving version is inspired by the preparation shared by Naturista. Making it as an individual bowl allows the Heen Bovitiya Powder to be measured using the serving directions on the pack.
Preparation time: 5 minutes
Cooking time: 25–30 minutes
Serves: 1
Ingredients
- 1/4 cup (45 g) red rice or white rice, rinsed
- 1 1/4 cups (300 ml) water, plus more if needed
- 1 small garlic clove, finely chopped or crushed
- 1/2 cup (120 ml) unsweetened light coconut milk
- Naturista Heen Bovitiya Powder, one serving measured according to the current package directions
- Small pinch of salt, or to taste
Method
- Add the rinsed rice, water, and garlic to a small saucepan.
- Bring to a boil, lower the heat, and simmer until the rice is very soft. Add a little more water if the pan becomes dry.
- Mash the rice with the back of a spoon for a rustic texture, or blend carefully until smoother.
- Return the rice to low heat. Stir in the coconut milk and the label-directed serving of Heen Bovitiya Powder.
- Cook gently for about 5 minutes, stirring frequently. Do not allow the coconut milk to scorch.
- Season lightly with salt. Add warm water if you prefer a thinner, drinkable porridge.
- Serve warm.
Kitchen notes
- Red rice gives the kenda a pleasantly nutty flavor, while white rice produces a milder bowl.
- For a lighter texture, use thin coconut milk rather than coconut cream.
- Kola kenda is savory. There is no need to add sugar.
- If your product package gives different preparation instructions, follow the package.
